At The Royal Highland Show
The Royal Highland Show is a well attended event and no better place to promote our great Scottish Seafood which is now a global brand.
Last week’s event was an opportunity for me to showcase the fish that Skipper’s Choice supply using seasonality and simple quick food recipes to capture the crowd’s imaginations and tastebuds.
Herring is now in season and there’s plenty you can do with it. I decided to coat it in oatmeal and bake in the oven for a quick and easy delicious dish. Served up as tasters along with scallops, monkfish, mackerel, squid and langoustines, it went down a treat!
My big finale was to cook and present a paella “Jimmy Buchan” style – a fantastic way to finish the day and bring a taste of Scottish Seafood to a new audience.
